Processing method:
With this processing method, only the ripest red cherries are picked. The first fermentation is an anaerobic dry fermentation in a tank for three days. The second fermentation is a submerged fermentation without yeast for four days. This is followed by air drying for three days, followed by tunnel drying for fourteen days, and resting for seven days. The cherries are then dried again in the tunnel drying for seven days until the desired moisture content is reached. The dried cherries are left to rest for one month, then shelled and sorted by hand.

About the farmer:

Wahyu Setiono is the founder of the Kojoyo cooperative, established in 2019 to support farmers in the Temanggung region in producing specialty Arabica coffee. The cooperative consists of 250 farmers across six districts, four of which focus on specialty Arabica. Wahyu, who originally studied theology and aspired to become a priest, discovered the world of coffee processing in 2019 and was inspired to master these techniques himself. He received training in coffee cupping and processing at Java Legend, an Indonesian coffee school.

Kojoyo was founded with the goal of improving the economic situation of farmers and helping them transition from tobacco farms to sustainable coffee production. The cooperative also focused on strengthening the community by collaborating with Indonesia’s counterterrorism organization (BNPT), encouraging former terrorists and farmers to find work in coffee production and tourism. 

In addition to its focus on sustainable agriculture and the transition from tobacco to coffee, Wahyu is also working to restore soil health through organic farming, windbreaks, and the production of organic fertilizers. Despite the challenges of unpredictable weather and natural disasters, Wahyu remains committed to helping the region thrive through coffee and social change.
