After roasting coffee needs to degass for 4-5 days. Because coffee is a fresh product like vegetables and fruit, the taste will change over time. Unlike a very dark roasted coffee you buy in the supermarket, specialty coffee has its own peaking period after roasting. This can be 4 days or even 5 or 5 weeks! Indonesia is a good example. It may taste flat after 5 days but very fruity after 2 weeks and even better after up to 3 months!

Fair trade helps the farmers to get a fair price for their product. A fair price is a price in relation to the production costs and not the price on the stock exchange!
It seems like a no-brainer buy fairtrade labeled coffee and there are no loose ends, however… the fairtrade price is still very low. For a fairtrade price it’s impossible to produce a high quality specialty coffee! Specialty coffee is another segment in the market (only 10% of all coffee in the world). Here the prices are based on quality. The only way to pay the right price is Direct Trade with the farmer. The buyer may be asking for a better quality, but the farmer will get a better price and it will be worth for him to produce better coffee!
Coffee is tasking different 30 minutes after grinding the beans already. For this reason we recommend to grind the beans yourself. Just make sure you have a grinder that does a good job. The grinder is more important compared to the machine! Based on the budget I can recommend a Baratza Encore for filter coffee.
You can also choose for a hand grinder. Look for a KINGrinder if you are on a budget and something like a Comandante if you go for a better quality and result!
